Have you ever had the power go out and only then realize just how much you use your microwave every day? Between hot dogs for lunch, veggies for dinner and maybe a warmed-up snack or two in between, I use my microwave at least 5 times a day. I don’t know about you, but I couldn’t live without it! I’ve never used any kind of microwave cover, however, and after recently spending about 15 minutes scrubbing splattered food off the inside walls, I realized it was time to make some changes!

So, does it really work? It does! I’ve used it several times now to steam veggies, cook frozen veggies and reheat leftovers. I’ve been happy with the consistency of the steamed veggies and even happier that I’m not leaching chemicals into my food by cooking them with plastic wrap over the top. I find that when I’m heating frozen veggies I don’t have to add as much water to the bowl because of the steam that is already in the MOLO when I microwave. That means less water that I have to drain off before serving the veggies, and less time to the table equals a happier family 🙂

These carrots were perfectly cooked; soft and moist with no weird dry spots on any of them. I forgot to take a picture before I set them on the table and my rabbit-family gobbled them up before I could stop them! But believe me when I say they all looked like this:

I even put the MOLO to the ultimate test: I reheated restaurant french fries! I’ve tried this before with several disastrous, disgusting results. The fries are either limp and soggy or hard and overcooked and usually broiling hot when bitten into. I nuked some fries from Red Robin yesterday with the MOLO covering the plate and the result was quite pleasing! Microwaved fries can never come close to the fresh stuff, but these were delightfully edible. I even ate a few, and I NEVER eat reheated fries (for the reasons stated above). Obviously, my kids ate them, no problem.

My only complaint about the MOLO is that when you go to grab your food out of the microwave, you have to hold the MOLO straight or the water inside the moisture holder will spill out and onto your food, the inside of the microwave or your counter. I’m sure as I get used to using it and with some finessing I’ll be able to get my food out without spilling every time. A few years ago, I spent a carefree day at a Women’s Expo, held at UVU in Orem, UT.  I so distinctly remember one of the booths and their phenomenal white sauce, that years later, I knew I wanted to try it again.  It was Shirley J, and their famous white sauce!
Shirley-J-logo4I could immediately think of so many ways to use this–on pasta, over rice, as a gravy, etc.  The fact that you only need to add water made it almost irresistible.  I could only think of how many dozens of cans of cream-of-whatever I wouldn’t have to haul.  Lucky me, to get to review the Whisk Bliss, Universal Cook Base, the Biscuit & Baking mix, and the Chicken Bouillon!

The Whisk Bliss was just as fabulous as I remembered it years ago.  Just add water and whisk it together.  Couldn’t be easier.

The biscuits were also just as easy, and turned out so tasty!  Very, very easy to make.  I used a Pampered Chef pastry cutter and embosser, but any round cutter would work fine.  I think I expected the biscuits to be a little bigger, or to rise a little more, but I did beat them pretty hard, and my husband still thought they were perfect.

We made these for a Saturday morning breakfast, and both of us could only eat two biscuits w/gravy before we were stuffed.  Filling, to say the least.

My sister-in-laws and I have started collecting mugs together.  You know, those cute “You Are Here” mugs, found at Starbucks, and its sure been fun to pull them out almost every other night for warm treats and drinks!  There is something about cold weather that makes you want to eat nothing cooler than fresh-out-of-the-oven.  Or in this case, fresh out of the microwave.  Its true, I’m going to tell you about a most delicious treat, called Mugging!, from Shirley J, that involves mixing a few contents in a mug, microwaving for a couple minutes, and eating right out of the mug.

There are 8 different flavors, and we’ve been able to try five of them–all favorites.  They are really very simple to make.  Dump the contents in a mug, follow to directions to add water and usually one other ingredient, like canned pumpkin, chocolate chips, or an egg.

The finished product has a good consistency–not fluffy and airy like cheap cake, but something thicker, more like a bread pudding.  And OH how filling!  Three of us had one to ourselves on an empty stomach, and not one of us could finish.  This is not just a snack, but really a full-size dessert or meal, so you could half it or go into it solo if you’re very hungry.  You could easily split this between two people and feel like you had a full dessert or meal.  I just tried the Quiche in a Cup for breakfast, and its almost 2pm and I’m still not hungry.

These flavors are delicious!  What really makes these fun are the add-ins on the back of the packet.  There are usually three or four ideas of how to take this to the next level, like adding in particular ingredients such as tomatoes, more cheese, green peppers, or in regards to the desserts, add-ins like chocolate chips, walnuts, raisins, marshmallows, etc.  The Chocolate Brownie Cake is a real winner.

We found that with each of these packets, we had to microwave for atleast an additional 1:30 beyond what the directions said, but the possibility of this happening is indicated on the back, and we do have a very weak microwave.  Even with interrupted cooking times, everything turned out scrumptious.

Have you noticed all of my food/cooking-related reviews lately?!  Fall is the season to COOK!  I think it is the colder weather that brings us inside and makes us more acutely aware of all the glorious scents and flavors of fall cooking since we’re gathering more often around the kitchen stove instead of the backyard grill.  With so many things to cook, and so many recipes to create, I need good tools and equipment!  As I’ve been more frequently using our knives and blades lately, I’ve been noticing how dull they are becoming, and how even a pizza cutter doesn’t last forever.  When I was asked to review this Demi Lune 13 3/4″ Pizza Cutter by Epica, I instantly (said yes and) thought of all the things I could do with this!

Chop nuts, slice bread, mince herbs, chop vegetables, slice fruit, etc.  This is not a one-trick pony.  I’m dying to try using it as a sort of chopper/mixer/scooper blade on some ice cream, just like Cold Stone Creamery. But let’s focus on its awesomeness as a pizza cutter.  This thing is huge.  So wide at 13 3/4″ long, that it can slice practically any pizza from crust to crust with one swoop.  Its 3″ tall, so deep dishes aren’t even a problem.  We found that it was actually too long for our pans with lips/edges like in the picture below, and we couldn’t get to both crust edges in one swoop, but we agreed that this weapon would go to town on a pizza stone.

So sturdy!  This guy is made of heavyweight 18/0 stainless steel.  The handle is smooth and easy to grasp, and though it might look hard to clean, its completely dishwasher safe.  I only wish it came with a cover!  This is a weapon of mass destruction!  Where am I going to store this?!

The best part about using a demi lune blade on pizza is that it doesn’t drag toppings down into the cut, or pull them along like a hand cutter does.  My biggest beef with our hand cutter is that when the pizza is on a round pan and you’re trying to slice it up 8 ways, the round blade reaches the edge of the round pan and the crust edges never get chopped.  I usually have to bring out the kitchen shears after that and finish the job.  This Epica blade attacks the crust with ease, and the sharp almost-90° corners can easily reach those difficult crust edges.

When you hear the phrase, “Bar-B-Que” what comes to mind? If it’s hot dogs and burgers, chances are you grew up on the West Coast. If it’s ribs, brisket and maybe a smoked turkey, chances are you’re from the South. I’m a California girl myself, but we lived in Georgia for two years and I was so confused the first time we showed up at a church “Bar-B-Que” and there were no hot dogs! Even after our stint in the South, I still equate “BBQ” with burgers and dogs, but after tasting some of the delicacies the South has to offer in the way of BBQ, I have definitely broadened my horizons. Today’s giveaway from Harold Import Company will surely do that for you, too.

I was sent an Elizabeth Karmel’s Grill Friends Brining Bag made by HIC, Harold Import Co. What’s a Brining Bag, you ask? Don’t worry, I had to ask, too. Well, a Brining Bag is basically a giant, heavy-duty zippered bag that allows you to brine a chicken or turkey before grilling or roasting. What’s a brine? Glad you asked. A brine is simply boiled water, salt and some type of sweetener (brown sugar, maple syrup, etc.) that helps flavor your meat and helps it to retain moisture so it’s nice and juicy when it’s done.

 The bag  was thick and sturdy and I never once worried that it would leak–even when I filled it with two gallons of brine and an eight pound chicken! The plastic Sealing Zipper helped ensure the bag was completely secure and made it easy to close.  There are recipes and detailed instructions included with the bag so doing the brining (which was foreign to me) was a cinch! Here’s me with my chicken in the brine, ready to sit in the fridge for 18 hours.

I put our chicken in the fridge at 10 pm Friday night and got it out to grill at 4 pm on Saturday.  Here it is, ready to be grilled.

The grilling time for the chicken was the same as cooking it in an oven; about 11-13 minutes per pound. The instructions said to grill it in a disposable pan for the first 30 minutes and then transfer it to the grill. Ours got a little Cajun style on the wings and the bottom because apparently our grill has some powerful flames, but overall the cooking was easy and flawless.

Ta-Da! See the juices coming out of the bird, even after being in a BBQ for an hour and a half? That’s all thanks to the Brining process. Every time we have company over from out of town, which ends up being much more often than I imagined, I make our guests a Boston Cream Pie.  Its so nice having a go-to dessert, and I’ve been intent on making it better every time.  Ladies and gentlemen, after two and a half years of Boston Cream Pies, this was my best one yet!  I had family in town to run the Boston Marathon (and yes, they were all ok, just having crossed the finish line four minutes before the explosions), and I was more than happy to make their visit complete with one of my pies.

These tools make cake making a breeze, and whole lot more fun.  Just call me silicone’s greatest fan, again, because these silicone bag ties are great.  Now I don’t have to save all the twisties from empty bread bags since these are reusable.  They are sure strong, and the friendly face on the end makes my ingredient bags happy :)  These would also be great to use on cords or bundles of odds and ends.  The seal is rather tight, but easy to undo.

First I got to work on the yellow.  Baking in a springform pan is great–you don’t have to worry about how you’re going to dump out your hard work in a single piece with out sticking.  After the cake bakes, just unlatch the spring on the side, and the cake stays put on the center round while you lift off the sides.  As far as springform pans go, this one is top-notch.  The parts glide together and apart, it has a tight seal, and it is smooth and durable.

After the cake cooled and I let it sit in the freezer for a while to stiffen up, I pulled out this cake cutter.  I worked for a summer as a cake decorator, and to make filled cakes, we had to first saw them in half, and mine never turned out quite even, as in the filling would end up higher on one side of the cake and lower on the other.  I still can’t slice a cake down the middle, even after that whole summer of practicing.  This cake cutter is heaven sent.  The wires are intensely strong, and adjustable so that you can move where you’d like your filling, and with two wires, you could make two slices and have a 5 layer cake.  Its a piece of cake, haha.

After I spread the filling, I put the springform rim back on and set the whole ensemble in the freezer.  Having the sides back on was so helpful so that the filling wouldn’t smoosh out while it settled.  Once the cake was slightly frozen and I didn’t worry about it falling anymore, off came the springform rim, and I served the cake directly on the base.  This set-up was great!  For every future Boston Cream Pie, I will do exactly this!

My turn!  Do you love my hot apron?!  I’m wearing The Lindy apron – a solid red with leopard details, adorable buttons, adjustable button and loops in the back neck, and extra long ties so that I can tie a bow in the front.  This pocket in the front is huge, but SO useful.  I tried on this apron yesterday morning and have hardly taken it off–especially for our Sunday post-church-scramble to get the house put back together and dinner on the table.  Its just so cute and comfortable!

Since I started really getting down and dirty with the cleaning around here (little boys are SO messy!), I’ve taken rubber gloves more seriously.  I love being able to protect my hands from scalding hot dish water while also protecting my nailpolish from chipping away.  Plus I feel like a rockstar when I’m cleaning the toilet, and who can honestly say that? These are fantastic!  They easily cover enough of my arm that I don’t have to worry about rolling up my sleeves.  The rubber is thick and the glossy bow makes these almost too sexy for the kitchen.  I can definitely tell that these gloves were designed for women, since my hands fits perfectly (like a glove, haha), but the finger space is still roomy and comfortable.

Now to complete my ensemble, I need a cute oven mitt set to match my apron and gloves!  The buttoned cuff on the mitt is just too much.  I can’t get over the cuteness.

Next up, do you ever find yourself hunting down bags to drop off your dry cleaning?  I’ll admit to once dropping mine off in a trash bag over a hanger.  Classy, Camille.  These dry cleaning bags are one of those unnecessary necessities, and oh so pretty!  Whoever is doing your dry cleaning is bound to think you’re a movie star when you drop off your stuff in one of these.

Ok, to be honest, when I next opened this darling blue box, I wasn’t exactly sure what it was or how to use it, but after trying it out, I totally see the usefulness of it.  These are magnetic key finders.  They consist of some intense little magnets.  Now, I am a culprit of carrying around a “pit”, a giant bag where nothing is organized and I stand at the door searching and searching for my keys among a hundred other things.  With the charm visible outside of your bag, and a magnet on the inside, as you drop your keys in, they cling to the inner magnet and are always there when you need them.  Since the charm is magnetic, you won’t be damaging your nice bag, and you can move it from purse to purse.

She still has a few months before she leaves, but we’re starting to round up all the things that she’ll need for dorm living, and we’re checking out all the great things at Dormco.com!  Little Sister and I looked the whole site over, and decided on one useful kitchen set: a Rice & Pasta College Cooker – Equipped Version

This is so nifty!  I think back to my college days, and anything microwavable was what I grabbed first.  There’s not always the time, energy, or stove access to boil up pasta or rice on a dime, so this is a treasure.  You just throw the ingredients in, fill with enough water to cover the pasta or rice, top with the lid, and toss the container in the microwave.

The 8-cup capacity is well over enough space for the typical one-serving dishes, but spacious enough to feed your roommates too.  Included in this set are measuring cups and spoons, the steamer insert, a server paddle, and a most useful pasta measure!  I ALWAYS guess wrong on pasta, so the circular guide on how much spaghetti to dump in is completely useful.

We did a trial run of some pasta at home this weekend while I was visiting, and our shells turned out great!  My little brothers were claiming dibs on it when we pulled it out.  Little sister is already an excellent cook, but this set will only simplify her cooking routine and come in handy on many occasions!

Silpat® Entremet by HIC Brands that Cook {Review}

I’m sure you’ve caught on to my love of silicone bakeware by now.  I’m pretty much a silicone salesman whenever guests are over and they comment on my collection.  There are just so many good things to say about it!  One piece of silicone bakeware I hadn’t yet tried was this Silpat® Entremet by HIC Brands that Cook, so of course, I jumped at the chance when HIC asked if I would review one.  First of all, an entremet is a French special cake, either sweet or savory, but you could cook all sorts of delicate treats in this.  Basically it is a silicone baking sheet reinforced with a special fiberglass mesh that allows for an even transfer of heat and even cooking throughout the dish.

Silicone is naturally nonstick, so specialty items like ganache and jellies are easily removed.  I would next like to try drizzling baking chocolate in intricate designs onto the sheet.  I’m sure I could cool them on the pan and preserving the beautiful presentation after lifting out of a flexible nonstick baking sheet like this.

The pan measures 10″ x 13 3/4″ x 1″ to fit inside an 13″ x 18″ cookie sheet, since placing it on a hard surface is recommended to transfer best in and out of the oven.  The Silpat® Entremet is microwave, oven and freezer safe, so you could even bake in the microwave on this!  I bet it would do a great job!

I tried a favorite pumpkin roll recipe of mine, knowing that after cooking the pumpkin in a sheet pan, it would need to be rolled.  The Silpat® Entremet was perfect for the job.  I could flip over the cake and peel off the pan like wax paper.

I made my recipe with fresh pumpkin that I pureed in October and had frozen for a few months, so it has a much lighter orange color than canned pumpkin.  And don’t tell the kids, but those are actually carrots and zucchini bits instead of funfetti sprinkles, haha!  I am not ashamed of smuggling a few veggies in where I can!  After it cooled, I filled the roll with a cream cheese filling, and it can be sliced like bread.  Oh mercy, I love this stuff!

This pan would be great for layered baking, where you bake one hard layer at a time and remove from the pan in an entire piece to place on top of another.  When you’re done, you just rinse off the pan.  No scraping or dishwashing, but the nonstick surface doesn’t hold on to a lot of residue anyways.  I’m excited to try more recipes with this shiny guy!  See what else is new at Harold Import Co. and try your hand at some new recipes using your own Entremet, then come back and share with me your recipes!

If you have been on a cruise recently, you probably know what I mean when I say, “chocolate melting cake”.  If you’re like us, and have tried for months and years to recreate that recipe without any luck, listen in!  We’ve found the perfect imitation recipe!  And I think the key difference in our success was cooking them in our new beautiful porcelain ramekins from HIC – Brands that Cook!

When my husband came home and I pulled these out of the box, he exclaimed, “molten lava cake?!”.  Haha, indeed, we have an ultimate favorite dessert around here, and HIC just made our dessert dreams come true.  Previously, we’ve made our lava cakes in giant muffin tins, but methinks it doesn’t create an even cooking medium like porcelain ramekins.  Previously, we’ve had to dump out our cakes unless we all want to huddle around the ugly muffin tin.  Not so cool when we have guests over for dessert.

These ramekins are just the ticket–they are just so pretty!  They are called Oven-to-Table Transitionals because, just like they say, they can go straight from the oven, to the table.  Aka, the cooking dish IS the serving dish, and the beautiful red high-fired scratch-free glaze makes it as lovely and appealing as the food inside.

These ramekins are top quality!  They are solid, sturdy, and have a good weight.  The glaze is excellently finished, and the textured sides are great for handling.  They washed up as nice as new, and didn’t leave any stains or residue.  There are no rough places or paint imperfections, and the paint is so deep and vibrant!
