When my husband and I were first married, I remember wanting to make lasagna for dinner one night.  I’m the oldest of four children, so I knew what I was doing and was comfortable in the kitchen.  We sat down to a piping hot pan of delicious lasagna, a fresh garden salad, and garlic bread that night…  and the next night…  and took leftovers for lunch…  for about a week.  🙁 It was about that time that I discovered making freezer meals with half of the recipe.

Fast forward about a year, when I’ve figured out the whole cooking-for-two-people thing and also the sticking-meals-in-the-freezer thing.  We got a great deal on a small chest freezer, and we LOVED it (that same one is actually in my garage as we speak!).  The bad thing, though?  Lots of freezer meals that I had completely forgotten about.  And, later, tossed out.
